Ingredients
- 2 oz peach purée (fresh or canned)
- ¼ oz vanilla simple syrup
- Top with chilled champagne or Prosecco
- Fresh peach slice + mint garnish
Method
- Spoon peach purée into the bottom of a chilled flute.
- Add vanilla syrup.
- Gently pour champagne over the back of a bar spoon.
- The purée will bloom upward beautifully — don't stir.
- Garnish with a thin peach slice on the rim.
